Although I am absolutely blessed with a home of veggie eaters, I’ve been around plenty of kiddos in my life to know the above sentiment rather well.
My tip? Get them involved in the prep! Kale is easy to strip from the stalks when zipped down tip to root, and Hazey has a blast trying to outpace the other dishes when on Kale Prep duty!
Rinse and remove the leaves from the stalks, and know that it will condense in size after massaged.
For every bunch or 2 cups of curly kale, finely mince one clove garlic. I typically do about four cups
Put the 2 cloves of minced garlic in a small dish, add:
- 1/2 teaspoon apple cider vinegar
- 1 teaspoon fresh lemon juice
- 2 tablespoons EVOO
- a pinch of salt
- a pinch of whatever green herb is your kiddos’ fave
Whisk these items together well and pour over cleaned, ripped-into-tiny-shreds / chopped kale
Now… the fun and messy part –
Give those greens a well deserved massage! Think a cross between kneading and the motion you make rolling playdough into snake shapes.
Soon you’ll see that the kale takes on a glossier, darker look. It should be about five minutes depending on your massage vigor! At this point you want to
- finely grate a hard cheese such as parm or asiago into the kale.
Massage a bit more, and you’ve got delicious kale salad that is high in iron, fiber, and vitamin C.
